Gluten-free Pancakes

If, on your way towards eating better, you decide to try some of the gluten-free products, beware that although it is gluten-free (good thing!), products that come packaged are typically loaded with other unnecessary ingredients like lots of sugar, additives and preservatives (bad thing!).  Before you purchase a gluten-free product, read labels. If the label contains words that are hard to pronounce, ditch the product.  Often times, you can make things at home that are MUCH healthier for you!
The following recipe is not only delicious, but you provide your body with some important nutrients without the added sugars, unhealthy fats, additives and preservatives.


2 whole eggs
1/2 cup almond meal
1/2 cup coconut milk
1 apple, cored and diced
2 tsp cinnamon
1 tsp vanilla extract
1/2 pint fresh blueberries
coconut oil for cooking

Combine all ingredients, except blueberries, into a blender or food processor and blend until smooth. Pour into a bowl and add blueberries. Heat a large pan on medium heat; add coconut oil and cook small pancakes 2-3 minutes on each side (these can be hard to flip, so when they are ready, jab the spatula underneath fast).  I serve these with a side of eggs and we have a balanced breakfast!
